- In general, the fresh tea leaves go through the steaming process immediately to prevent oxidation (if the leaves are fully oxidized, it become black tea).
- Then, we start the tea leaf drying and rolling process. In this process, the tea dries off. As a result, it gets well-shaped and tastes good.
- The shape of the leaves is long and narrow in appearance and light in color in the cup.
Shincha brews a light yellow to powerful green color. The taste of Shincha is fresh and in the balance between its natural sweetness and its astringency. and also exhibiting its vegetal or grassiness without being bitter.
